Chipolte Burgers

   Ingredients

  • 1 lb. Ground Beef
  • 1 Tbsp. Chipotle Meat Rub (more or less to taste)

   Directions

  • Mix Chipotle Meat Rub into ground beef
  • Patty into 4 burgers
  • Pan fry or grill to your liking
  • Serve on a bun

Yields 4 servings

Chipotle Baby Back Ribs

   Ingredients

  • 1 packet Thunderbird Ranch Chipotle Meat Rub
  • 2 full racks of baby back ribs
  • Bonnies's Country Classics TexMex Barbeque Sauce

   Directions

  • Rub Chipotle Meat Rub generously over rib racks until ribs are covered.
  • Place ribs in shallow pan with 1 1/2 inches of water.
  • Cover with foil and bake in 350 degrees oven for 2 hours.
  • Cool for 1/2 hour and place on grill and baste with Bonnie's Country Classics TexMex Barbeque Sauce.

Approximately 6 servings

Chipotle Drummettes

   Ingredients

  • 1 Tbls. Thunderbird Ranch Chipotle Meat Rub
  • 1/3 cup vegetable oil
  • 24 chicken drummettes (about 2 pounds)

   Directions

  • Blend Chipotle Meat Rub with oil in large bowl. Add drummettes; toss well to coat. Place coated drummettes on foil-lined baking pan; bake at 425 degrees F for 25 minutes. Turn drummettes over; bake an additional 20 minutes.
  • Dip cooked drummettes in prepared Thunderbird Ranch Blue Cheese Dip mix or in Chipotle Dip prepared by adding 1 scant Tbls. Chipotle Meat Rub in 8 oz. sour cream
Roasted Chipotle Chili

   Ingredients

  • 1 Box Thunderbird Ranch Boot Scootin' Chili Mix
  • 1/2 Pkg. Roasted Chipotle Meat Rub (more if you like it spicier)
  • 1 lb. Ground Beef

   Directions

  • Make Chili according to directions on box
  • Add the Roasted Chipotle Meat Rub
  • Fry ground beef, drain and add to Chili
  • Garnish with Cheddar Cheese and Sour Cream if you like
Roasted Chipotle Pulled Pork Sandwiches

   Ingredients

  • 6-9 lb. Pork Loin
  • 1 Pkg. Roasted Chipotle Meat Rub
  • Yellow Mustard
  • 16oz bottle of your favorite BBQ Sauce

   Directions

  • Preheat oven to 325 degrees
  • Cut silver skin away from pork loin
  • Rub enough yellow mustard on loin to coat it, this will help seal in the juices and keep it moist
  • Sprinkle and rub the Roasted Chipotle Meat Rub over the entire pork loin
  • Place on a rack in a roasting pan with about 1/2 cup water in the bottom of the pan. Roast should not be laying directly on the bottom of the pan
  • Slow roast for 2 1/2 - 3 1/2 hours until internal temp reaches 145 degrees.
  • Let meat rest for 1/2 hour
  • Shred meat with two forks
  • Add BBQ sauce, mix well
  • Serve on buns
Tex-Mex Hash Browns                                 Serves: 6

 Ingredients

  • 2 large baking potatoes. washed and cut into 1-2" cubes
  • 3-4 Red potatoes, washed and cut into 1-2" cubes
  • 1 large red or green bell pepper, seeded and cut into 1" pieces
  • 1/2 medium yellow onion, peeled and cut into 1" pieces
  • 1/2 tsp sea salt
  • 2 tsps Thunderbird Ranch Chipotle or Sriracha Blackened Meat Rub/Seasoning
  • 2 Tbsp olive oil 
 Directions
  • Preheat oven to 400°.
  • In a large bowl, combine pepper, cayenne, salt, Tbird Rub and oil.
  • Add potatoes, peppers and onions and toss to coat.
  • Place all ingredients in a single layer on a lightly oiled cookie sheet and bake for 30 minutes until browned.
